The star cocktail of brunches sublimated by the pear !
Stir gently all ingredients into a mixing glass with 3-4 ice cubes then strain into a large wine or champagne glass
1.5 oz / 40 ml Belle de Brillet
1.75 oz / 50 ml Fresh orange juice
4 oz / 120 ml Champagne or sparkling wine
(white peach puree could also be used for a twisted version of the Belle-ini !)
