The star cocktail of brunches sublimated by the pear !
Stir gently all ingredients into a mixing glass with 3-4 ice cubes then strain into a large wine or champagne glass
40ml / 1.3fl oz Belle de Brillet
50ml / 1.7fl oz fresh orange juice
120ml / 4fl oz Champagne or sparkling wine
(white peach puree could also be used for a twisted version of the Belle-ini !)
